Maintaining a consistent temperature is crucial, and the Weber does this better than any other in its price range. You can thank the porcelain-enameled bowl and lid, which are heat retention pros, for that. Still, keeping an eye on the thermometer will help you determine if you need to add more coal, wood, or even adjust the airflow using the rust-resistant aluminum dampers.

For our tests, each grill gets a full chimney of lit charcoal and a 6-pound chicken opposite the coals for indirect heat. Charcoal briquettes and lump charcoal are easier to ignite and keep lit than ordinary firewood. That said, charcoal (especially in briquette form) produces a lot more ash than hardwood.

Smaller than most of the other models we tested, and with fewer bells and whistles, the SNS Original Charcoal Grill is a solid performer that can hold its own in both grilling and smoking. Our rib experience with a few of the other grills was far from ideal. At times, the inside of this grill hit temperatures as high as 400 degrees F.
