Although it’s not a purpose-built smoker, it is certainly possible to do some smoking on your charcoal grill with the help of the charcoal snake method and some good temp control via the vents. A heat shield just beneath the heat-resistant glass-reinforced nylon lid handle prevents you from burning weber bbq yourself. The enclosed ash catcher below the grill body is a major upgrade in this version and makes cleanup much easier (more on that later). The circular cooking surface area is relatively petite, with a 22-inch diameter, but testers noted that when set up as a smoker, it can still handle two to three racks of ribs. In our smoking test, the ribs had a quarter-inch pale pink smoke ring, and a nicely glossy, caramelized exterior.

In evaluating charcoal grills, we evaluated their performance with evenness of cooking, grill marks, caramelization and char, tenderness, and overall flavor. A high-performing grill should be able to reach a desired temperature and stay there steadily with monitoring. Some grills we tested had multiple damper adjustments weber portable grill to make this happen, while others relied primarily on the use of a lid or vent.
